We provide premium quality “Crassostrea Virginica” Atlantic oysters grown responsibly in Bouctouche Bay, New Brunswick, Canada.
We produce our oysters naturally, through a very green process, and offer premium quality by controlling every aspect of production.
This includes collecting our oysters spat from a natural environment, growing, harvesting and grading them on-site in our processing facility located in Bouctouche, NB.
We’re passionate about producing oysters and we work hard to deliver the freshest, most sustainably sourced oysters, grown and harvested with care and attention.
We Have A Unique Farming Environment for Oysters
Our unique ecosystem, because of the sand dune in Bouctouche, is home to some of the most unique farming conditions in the world. In addition, this area is protected from the open ocean by the sand dunes.
As a result, the salinity of the water gives the oysters their unique taste.
The colder temperatures means that our oysters go dormant during the winter months: they don’t grow or eat. It gives them a longer shelf life.
The combination of tidal currents and nutrient-rich waters provides a natural phytoplankton diet for oysters.
The result is a fast-growing, plump, and meaty oyster with a unique flavor.
Our oysters are carefully monitored throughout their life cycle to ensure quality and safety standards are met.
We Suspend the Oyster Cages Near the Surface
We raise our oysters in floating cages suspended near the surface of the water.
By suspending the oyster cages near the surface, oysters can feed off the plankton-rich nutrients prevalent at this level.
These nutrients feed and grow the oysters naturally and quickly, speeding up the growth process and producing oysters in only 3.5 years instead of the more typical 7 or 8 years.
